Is there any point in outputting files...

If you want to edit the file substantially before saving it, then a 16-bit image will give you more latitude when doing stuff like applying gradients.

If that is not the case, and if you're only interested in the final JPEG, the no, you can go ahead and set your ACR workflow options to output the file straight from ACR as an 8-bit file.

Finally, if you're not going to edit the file at all, you're better off shooting JPEGs rather than raw with your camera.
